Healthy Turkey Chili




With all of this cold weather nothing sounds better than a bowl of hot chili! Here is one of our favorite recipes.

What You Will Need

1 pound ground turkey
1 35 ounce can whole tomatoes, roughly chopped with juices reserved
1 14 ounce can of tomato sauce
3 tablespoons chili powder
2 tablespoons ground cumin
1 14 ounce can of black beans, rinsed and drainedunnamed
1 14 ounce can of kidney beans or white beans, rinsed and drained
1 tablespoon minced garlic
1 medium yellow onion, finely chopped
2 large bell peppers (any color), diced
3 large carrots, diced
2 celery stalks, diced
2 Sweet Potatoes, chopped
1 cup frozen corn
Shredded Cheddar Cheese for Garnish
What You Need to Do

With this recipe you have two options:

Place all ingredients in a crock pot, I like to put the turkey and carrots toward the bottom because they take longer to cook, cover and cook on low heat for 8 hours.

If you are looking for a quicker option you can combine garlic, onion, bell peppers, sweet potatoes, carrots, celery, tomato sauce, tomatoes and their juices, chili powder, cumin, and corn in a dutch oven. Bring to a boil over high heat. Reduce to a low heat, cover, and simmer until the vegetables are tender. This should take about 8-10 minutes.

Raise the heat to high, add the ground turkey, ensure that you are stirring it to break up the chunks of turkey. Add the black beans and kidney beans, cover, bring to a boil, and reduce to medium-low heat and simmer, stirring occasionally until the turkey is cook through. This should also take about 8-10 minutes.

Serve chili and sprinkle with cheese if you desire.

Makes four servings at roughly 320 calories each!
