Healthy Chicken Meatballs

If you ask any of my friends they will tell you that the food I missed the most when I was a vegetarian was meatballs! I used to love spaghetti and meatballs and meatball subs! I just loved meatballs!

Now that I am back to eating meat again I was determined to find an amazing meatball recipe! I stumbled upon a delicious healthy chicken meatball recipe and modified it to my liking! It was so delicious that if I didn’t share it with you guys I would feel like I was doing everyone a disservice!

Healthy Chicken Meatballs


1 lb ground chicken
4 green onions, chopped
¼ cup chopped cilantro
1 tbsp red curry paste
1 cup breadcrumbs
1 egg
salt and pepper to taste


Preheat oven to 375 F degrees.

Place parchment paper over a baking sheet.

In a medium bowl mix all the ingredients for the meatballs together well.

Form the meatballs into small 1 inch balls.

Place meatballs on prepared baking sheet and bake for about 30 minutes or until done.

I like to serve it over spaghetti squash or zucchini noodles with marinara or peanut sauce with any sautéed vegetables!

Peanut Sauce Ingredients

1 tbsp sesame oil
1 can coconut milk
1 tbsp red curry paste
2 tbsp peanut butter
salt and pepper to taste
pinch of chili flakes


Heat the oil in a medium sauce pan or skillet.

Add the red curry paste and cook for a couple minutes.

Add the remaining ingredients, stir and cook for about 5 minutes.

Add meatballs to sauce and toss so that the meatballs are fully coated. Garnish with parsley or cilantro.
